Day 289 - January 9, 2011 - Pork Chops with Apple Stuffing

Before I start my long winded blog about these
pork chops let me first say Happy Birthday to
my dearest friend Debbie. Debbie turned 85 today,
oops, so sorry, I had that wrong, she is only 58
today. So Happy Birthday Debbie.
I painted you as the birthday girl of the day.



With that out of the way let me tell you that Tennessee,
esp. in the Nashville area and around is expecting more
of this stuff again. And for any of you that live in the Tennessee area when
the weather men call for SNOW everyone knows that
is the clue to go KROGERING. Now usually I could care less,
I have things on hand but today my Mom went and called
me back to tell me that they had chicken breast on sale
for 99 cents a pound. Since I eat a lot of chicken I decided
to go.......

and walked out with over a hundred dollars in grocerys.
I would have hated to see what the bill would have been if
I really needed something.
I also picked up pork chops for something I have not made
in awhile.



Directions call to cook the chops with the stuffing but
I started mine on top of the stove, mainly cause I
did not read the directions and it was not until I
had them in the pan that I did.....oh well.....


These are the other items you will need to go with this
dish.

See, I did go KROGERING!
The stuffing after it is cooked, following the directions on the box.



Spray your casserole dish with PAM....or an off brand, don't matter.
Then open you 20 oz can of apple pie filling.....looks yummy.


Thought you might need a closer look at those apples.


Then you spread you stuffing mix over the apples.



And top with your chops.




Set your oven at 375...



for 40 minutes.




And here is the finished dish.

On top of this meal I threw together a pot of veggie soup ~
and for those of you that don't know, I HATE to cook! But
I am getting meals together for next week and for lunches.

This pot of soup was cooled down and spooned into bowls
then put in the freezer for fast grab as you run out the door
lunches.
